IT'S SO SIMPLE:
- PLACE THE FOOD INTO A PLASTIC BAG OR GLASS CONTAINER
- SHAKE THE MARINADE TO INFUSE THE FLAVORS
- POUR IT OVER THE FOOD UNTIL COVERED
- SEAL THE CONTAINER AND REFRIGERATE FOR 30 MIN OR MORE
- REMOVE FROM CONATINER AND COOK USING YOUR PREFERRED METHOD
WHILE YOU ARE WAITING FOR THE MARINADE TO INFUSE YOU CAN COOK THE ADDITONS TO THE MEAL
Mediterranean Citrus cod or salmon with Grilled Asparagus and Hollandaise Sauce
Ingredients
- For the Fish:
- 4 cod or salmon fillets (about 6 oz each)
- 6fl oz Statesmen 30 Minute Marinade Mediterranean Citrus
- Salt and pepper to taste
- Lemon wedges (for serving)
- For the Grilled Asparagus(to add a twist-marinate with rest of the citrus marinade):
- 1 lb fresh asparagus, trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the Hollandaise Sauce:
- 3 large egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted and slightly cooled
- Salt to taste
- Pinch of cayenne pepper (optional)
- Marinate the Fish:
- Place the fish fillets in a shallow dish or resealable bag and pour the Statesmen 30 Minute Marinade Mediterranean Citrus over them.
- Let them marinate for at least 30 minutes.
- Prepare the Grilled Asparagus:
- Preheat your grill to medium-high heat.
- In a bowl, toss the asparagus with olive oil, salt, and pepper.
- Grill the Asparagus:
- Place the asparagus on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from the grill and set aside.
- pan sear the Fish in a skillet:
- Remove the fish from the marinade and discard the marinade.
- Season the fillets with a little pepper.
- add 2 tbs olive oile to skillet. pan sear the fish for about 4-5 minutes per side, or until the fish flakes easily with a fork and is cooked through.
- Make the Hollandaise Sauce:
- In a heatproof bowl (or double boiler), whisk together the egg yolks and lemon juice.
- Place the bowl over a pot of simmering water (making sure the bowl doesn’t touch the water). Whisk continuously until the mixture thickens slightly.
- Gradually add the melted butter while whisking until the sauce is smooth and thick. Season with salt and a pinch of cayenne pepper if desired.
- Serve:
- Plate the grilled fish alongside the grilled asparagus.
- Drizzle the hollandaise sauce over the fish and asparagus.
- Garnish with lemon wedges.
